Good morning! Welcome to another edition of WIAW! I realized my day of eating included a few servings of butter so hence the name of Butter Love.
Monday is the new Wednesday in this neck of the woods today. Why Monday? I usually type up my WIAW posts Tuesday night so they are live up for your reading fun bright and early on Wednesday mornings. Being on Central Time in Austin, I found that this change gave me more time to spend on my writing, proofreading and picture edits.
However, Scott and I usually eat dinner on the later side. If it was up to him we would probably eat around 8:30 or 9:00. I prefer to eat earlier. So together we compromise with a meal time of around 7:00 (when we can). He often works late (such is the life of a coach) so a lot of times I wait until he gets home. It would be about 9:30 or so by the time we ate dinner and cleaned up the kitchen. If I wanted to spend a little extra time on my pictures and such I would be up late typing away.
So I decided to switch it up and share a little recap of my Monday eats. For the most part, my meals and snacks during the week days are always very similar. Sometimes they get changed up on the weekends a bit. I will eat more snacks if I am out and about. Also, if we go out to dinner at a restaurant it is typically on a Saturday night.
What I Ate Monday Wednesday
Breakfast & Workout
The morning started bright and early with a big cup of coffee. I usually like to have some java and wait a little while to have breakfast. When I was finally hungry, I opted for my go-to open faced breakfast sandwich. Two pastured eggs, one slice of Ezekiel bread, and Kerrygold butter.
About an hour later I hit the gym to do a workout. Scott aka my trainer and workout partner was finishing up some grad work for his thesis so I was flying solo. I finished in around an hour and 15 minutes and hightailed it home to make a protein shake.
The afternoon was quickly flying by! I pulled together a quick lunch of a grass-fed burger and a salad. I have been trying to fit in more raw vegetables in my diet so this did the trick. I also enjoyed a coconut La Croix on the side.
One of my less healthy habits is that I tend to watch TV a lot when I eat. Perhaps it is a habit I picked up from living alone. If Scott is not out, then I will turn to a show for a little company. My current viewing is catching up on the latest season of Parenthood. I cannot believe it is almost over? I always feel a little saddened when a show I have followed so long comes to the end of the road.
My afternoon snack was two pieces of the Gingersnap Bread I had made over the weekend. I added a little Kerrygold butter and some pink Himalayan salt.
Do you add salt to your sweet treats? You really should. It enhances the flavor.
Scott was training clients so I was on my own for dinner. I decided to make my favorite squash dish that I had shared on the blog awhile back. It was a recipe inspired by Scott’s sister – check out the post here if you want a savory vs. sweet creation. We sadly did not have any cashews so I had to go without. I cooked up pasture raised sausage from a local farm that we purchased at the farmer’s market over the weekend.I was pretty full from the day – most likely due to a little more butter than usual. I skipped my usual dessert of dark chocolate. It was a cup of tea (not pictured) to round out the day.
Some time on the computer, reading, and then it was lights out!
