Power Up! Breakfast Parfait
I have been making a change in my daily routine these days. Instead of dragging myself to the gym late in the day I am trying to go first thing in the morning. For me, this has always been a tough habit to cultivate. However, I would like to workout when I have some energy for a change! That is never after a long day of sitting and slaving away on a computer.
So I set my alarm early and drag myself out of bed. I throw on my clothes, grab a quick cup of coffee and head out the door. I am not a huge fan of working out on a full stomach so you can imagine I am quite ravenous when I arrive back home. I need food and I want it fast. A breakfast parfait I can make ahead of time? That’s right! I played around a bit in the kitchen and came up with a new breakfast option I am loving too – I have coined it the Power Up! Breakfast Parfait.
ZonePerfect Nutrition Bars
I discovered ZonePerfect Nutrition Bars on a recent stock up trip to Walmart. I am always checking out the bar selections to see what I should try next. There were so many flavors! I ended up walking away with the Fudge Graham and Chocolate Peanut Butter.
The nutritional breakdown showed me that they were an excellent balance of macronutrients – fats, carbohydrates and protein for a reasonable amount of calories. A good parfait is all about the layers. I like to start with my Greek yogurt and layer the ingredients on top.
- 1 Cup Greek Yogurt
- 1 Packet Stevia
- 1 ZonePerfect® Bar in Chocolate Peanut Butter
- ½ Cup Old Fashioned Oats
- 1 Tablespoon Raw Sunflower Seeds
- Add the Greek Yogurt to a mason jar or bowl.
- Mix in the stevia packet so that it is well blended.
- Chop up the bar so that it is in bite-sized pieces.
- Layer the bar, oats and sunflower seeds.
- Refrigerate or grab a spoon to dig in!
