I spy some chocolate muffins! These easy to create muffins are incredibly delicious. Plus you would never guess it, but they are Paleo, grain-free, gluten-free, dairy free and low in sugar. The only thing not missing is the taste! Get ready to kick it into high gear with some caffeine and amazing taste that will hit the spot the next time your sweet tooth comes knocking.
Espresso Chocolate Muffins
Chocolate muffins. The inspiration came to me rather suddenly. As I have mentioned before I pay Scott for his help as an employee of The Bikini Experiment through baked goods. I’m not sure if this arrangement is totally fair, but it seems to be working right now. I’m sure he needs a raise at some point! But I definitely owed him a treat at least. He usually asks for blueberry muffins as payment, and I can’t complain. Because, well, I love blueberry muffins too.
There I was in the kitchen contemplating muffin flavors. As I was closing the refrigerator, I saw cold brew coffee on the door. Cold brew coffee is very concentrated and decadent in only a way coffee can be. Well, my mind was made up. I had to use the cold brew in this new batch of muffins. What goes well with coffee? Chocolate, my friends. Chocolate always goes well with coffee.
Health and Balance
I’m not completely gluten-free when it comes to my daily diet. I don’t consume great amounts of it, but I have no issue with wheat. However, I have come to really love grain-free baking. These treats are definitely still a treat. However, they are full of nutrient-dense ingredients. I used to think chocolate was an off-limit type of food! Much to my surprise and delight it’s actually very good for you.
We need treats here and there as a dash of fun between all the veggies. Am I wrong? Making them in your own kitchen will guarantee that there are no chemicals or unwanted ingredients lurking behind that espresso dreaminess. Nobody wants that in their muffin!
- 1 Cup Unsweetened Apple Sauce
- ⅓ Cup Cold Brew Coffee
- 2 Pasture-Raised Eggs
- 1 Teaspoon Vanilla Extract
- ½ Cup Almond Flour or Almond Meal
- 3 Tablespoons Coconut Flour
- ¼ Cup Unsweetened Cocoa
- 2½ Tablespoons Coconut Sugar
- 1 Teaspoon Baking Soda
- 1½ Teaspoons Coffee (finely ground)
- Pinch of Pink Himalayan Salt
- ½ Cup Dark Chocolate Chips
- Preheat the oven to 350 degrees.
- Grease a non-stick muffin tin with cooking spray and set aside.
- Place all of the wet ingredients in a food processor and mix until smooth.
- Add all of the dry ingredients and fold in until fully blended.
- Finish with the dark chocolate chips and mix until they are evenly distributed.
- Bake for 25 minutes or a toothpick inserted into one of the muffins comes out clean.
- Remove, cool and transfer to a baking rack.

As a lifetime lover of coffee I even have a Pinterest board where I collect assorted coffee love. I always feel validated when I come across another iconographic explaining how beneficial coffee can be. I know the taste is not for everyone. I totally get it.
