Quick and easy! Who has time for complicated dinners on a week night? Let’s say you have had a full day at work that has left you exhausted. You push yourself to get to the gym and workout. You packed that gym bag after all, and you owe it to yourself! After all that jazz, a working girl needs a quick and easy recipe that comes together in no time flat. You are in luck because The Bikini Experiment does not believe in meals or recipes that are complicated!
Loaded Sweet Potato Recipe
This delicious loaded Sweet Potato is going to delight your taste buds for sure. This recipe is full of healthy carbs and packed with protein due to the combination of Greek yogurt and black beans. The lime is the perfect zest, and the avocado is a punch of the daily fat you need. Do not skip the fat to save calories! While avocados, nuts and coconut oil are very nutrient dense you need them in your diet for a well rounded nutrition profile.
One of my secrets to help make a quick dinner is some simple meal prep. That’s right! I will bake sweet potatoes, grill chicken and wash veggies ahead of time so that when I walk in the door I have a few options waiting for me. It is not a perfect system, but I know when I have thought ahead it makes everything go more smoothly. If I have a sweet potato ready (score!) then this recipe is a breeze. All of the other ingredients can be quickly assembled. No muss, no fuss.
- 1 Medium Sweet Baked Potato
- 6 Ounces of Nonfat Plain Greek Yogurt (I like Siggi's)
- ¼ Cup of Black Beans (rinsed and drained)
- 2 Grape Tomatoes (finely chopped)
- ¼ of an Avocado
- Lime Wedges (to taste)
- Roast your sweet potato in the oven at 425 degrees for an hour.
- Layer your ingredients on top of the baked potato.
- Flavor with the juice from the lime.
- Grab a fork and dig in!
